Carrot Zucchini Bread

My sister, husband, and I have been doing a Sugar Detox now for a couple of weeks.  It was very hard in the beginning but we did find various recipes that helped us along the way.  The detox we chose to do is a gradual one.  So we cut out different things each week.  We are finally to the last week of it, which is absolutely no sugar! (If I can survive this, I can survive anything! ha)  This recipe really saves us during the first few weeks, until we had to cut out quick bread.  For this reason and for a friend I decided to post it.  All of the ingredients I used were organic, but I highlighted the ones that should be organic if you cannot do all of them.  I will make this again next week after this is over and up date with pictures!  Hope you are having a great Superbowl Sunday!!!

Carrot Zucchini Bread

Ingredients
  • 3 cups organic all-purpose flour (I use the whole wheat one)
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 4 tsp ground cinnamon (3 would suffice, I just really enjoy cinnamon)
  • 3 organic eggs
  • 1 cup safflower oil
  • 2 1/4 organic raw sugar
  • 3 tsp vanilla extract
  • 2 cups grated zucchini
  • 2 cups grated carrot
  • Olive oil spray (I use a mister)
Directions
  1. Spray two bread pans with olive oil spray.  Preheat oven to 325 degrees F.
  2. Sift flour, salt, baking powder, baking soda, and cinnamon together in a bowl.
  3. Beat eggs, safflower oil, vanilla, and raw sugar together.
  4. Add sifted ingredients to the egg mixture and beat well.
  5. Stir in zucchini and carrots until well mixed.
  6. Pour batter into prepared pans.
  7. Bake for 50 to 60 minutes or until toothpick comes out clean.
  8. Cool for 20 minutes.
  9. Enjoy! :)
*For the olive oil mister I use one that you put olive oil into, pump it a few times and it works just like any cooking spray, just a little bit healthier.  The one I use is by Misto.  ( I have no affiliation with Misto, just using it as an example.)
